Stir-fry Bitter Gourd in Fermented Black Bean Sauce

Ingredients

  • 1 piece (about 300g) bitter gourd
  • 200g pork belly, sliced into strips/cubes
  • 1 tsp of soy sauce
  • ½ tsp sugar
  • 1 tbsp minced garlic
  • ¼ teaspoon ground white pepper
  • 1 tbsp fermented black beans
  • 1 tbsp cornstarch
  • 2 tbsp cooking oil
  • 1/4 cup water

Directions

  1. Preparation: Wash and cut bitter gourd into half length-wise. Remove pith & seeds. To get rid of the bitterness of the bitter gourd, marinate the bitter gourd with a mixture of 1 tsp salt and 2 tsp sugar for 30 minutes, scald with hot water for 1 min. Drain and set aside.
  2. Cut the pork belly into strips. Marinate the pork with salt and cornstarch, set aside in the refrigerator for at least 30 minutes.
  3. Rinse the fermented black beans and mash with minced garlic, set aside.
  4. Heat 1 tablespoon of oil in frying pan over high heat, add the pork and brown about 2 minutes, flip and cook for another 1 minute. Transfer to a plate and set aside.
  5. Add 1 tablespoon of oil into the frying pan, add the garlic mixture and stir-fry until fragrant. Add the cooked pork, soy sauce, sugar, pepper and water, bring to a boil. Lower the heat, cover the pan and let it simmer for about 15 minutes or until the pork becomes tender. Add the bitter gourd, stir to combine and let it cook for 5 minutes.
  6. Transfer to a plate. Serve immediately.
