Kuih Talam Sweet Potato蕃薯打南

I have adapted the recipe from another blogger. Since I have doubts about the end result, I am not going to link to the site. The coconut layer is too hard and gives a very unnatural touch to the otherwise nice kuih. Do not use this recipe.


Ingredients

  • 100g sweet potato, steam and mash
  • 10g rice flour
  • 10g tapioca flour
  • 50g sugar
  • 110ml coconut milk
  • Coconut Layer

  • 100ml coconut milk
  • 10g rice flour
  • 5g tapioca flour
  • pinch of salt

Directions

  1. Peel and chop the sweet potato into smaller pieces to speed up steaming. Place in a steamer and steam for 20 minutes. Mash with a potato masher until smooth while it is hot, set aside to cool.
  2. In a mixing bowl, mix the mashed sweet potato, rice flour, tapioca flour, sugar and coconut milk until well combined and free of lump.
  3. Use small pudding cups so that it is easier to remove the kuih from the cup. Grease the mold with vegetable oil. Scoop the batter into the mold about 3/4 full. Steam for about 8 minutes.
  4. Prepare the coconut layer. In a mixing bowl, add in the thick coconut milk, rice flour, tapioca flour and salt. Mix well. Using a small spoon, top up the steamed kuih in step 3 with the batter. Steam for another 5 minutes.
  5. Set aside to cool before removing the kuih from the mold.
