Stir-fry Potato and Minced Meat

  • 1 large russet potato, peeled & sliced
  • 200g minced pork
  • 1 tbsp light soy sauce
  • 1 tsp dark soy sauce
  • 1 tsp oyster sauce
  • 1 tsp potato starch
  • 1 tbsp cooking oil
  • 2 cloves garlic, minced
  • 1 medium onion, peeled & quartered
  • 1/2 cup water
  • white pepper


  1. In a bowl, combine potato slice with light soy sauce, potato starch and white pepper. Set aside for 15 minutes.
  2. In a frying pan, heat up a tablespoon of oil over medium heat. Add minced garlic and cook till fragrant.
  3. Add in the minced meat and press it down using a spatula, cook until the meat is no longer pink. Break the meat apart using the spatula.
  4. Add in the onion and potato slices and cook until they are coated with oil. Add in the dark soy sauce and oyster sauce, mix well. Add in enough water to cover and bring to a boil. Cover and simmer for about 10 minutes or until the potato slices are soft. If you like the potato mashy like me, leave it longer.
  5. Transfer to a serving dish and serve hot.
