Long Beans with Tau Kua Stir-fry

Long beans: good source of protein, vitamin A, riboflavin, iron, phosphorus, potassium.


Ingredients


100g long bean, washed and cut into 5cm length
1 piece firm bean curd (tau kua), cut into strips
1 tbsp dried shrimps, soaked and drained
3 cloves garlic, minced
1 tbsp soy sauce
2 tbsp grapeseed oil
1 tbsp water

Directions

  1. In a frying pan, heat up cooking oil and add in tau kua. Stir-fry until the color turns golden. Transfer the tau kua to a plate.
  2. Add garlic and dried shrimps into the same pan and cook until fragrant.
  3. Add in the long beans and stir-fry for few minutes. Add in water and when the liquid comes to a boil, add in the soy sauce. Cover the pan and cook for about 8-10 minutes, longer if you prefer soft beans.
  4. Add in the tau kua and mixed well, cook for another 1 minute. Serve.
