Coffee Walnut Cake

Adapted & modified from “Coffee Caramel Cakes” in the book “Home Baked (The Australian Women’s Weekly: New Essentials)” pg84

Coffee cake is now my all-time favourite! This cake is wow, not yum! Basic ingredients that can be found in any home kitchen and if you plan it properly, a one-bowl recipe!


  • 67g unsalted butter, room temperature
  • 70g brown sugar
  • 1 tbsp instant coffee powder
  • 1/2 tbsp boiling water
  • 1 egg
  • 1 cup self-raising flour
  • 1/4 cup milk
  • 6 walnuts


  1. Preheat oven to 180C Fan. Line a 6-hole muffin tray or grease if not using muffin liner. Mix the coffee powder with the hot water and set aside.
  2. In a mixing bowl, beat butter and sugar with electric hand whisk until light and fluffy. Add the coffee mixture and egg, whisk until well combined.
  3. Fold in the flour and milk, mix well. Spoon the batter into the prepared tray. Press the walnut into the cake.
  4. Bake the cakes for 20 minutes. Cool in the tray for 5 minutes and transfer them to a wire rack.
