Stir-fry Noodles with Vegetables


This is a versatile recipe, you can add in prawns, meat, fish cake or other vegetables. All you need to do is stir-fry them before adding the noodles.

Ingredients

  • noodles (2 servings), boiled for 5 minutes in hot water
  • 50g Beijing cabbage, wash and sliced
  • 2 fresh shitake mushrooms, sliced
  • 1 large egg
  • 1 clove garlic, peeled & minced
  • 1 tbsp light soy sauce
  • 1 tbsp grapeseed oil
  • 1/2 cup water

Directions

  1. Add oil into a frying pan, add in the egg and fry until just cook. Dish up and set aside.
  2. Add garlic and fry until fragrant. Add mushrooms and cabbage and cook for about 2 minutes. Add in the noddles, followed by the seasonings. Stir fry until all the noodles is coated with the seasonings. Add water, cover and cook for another minute. Remove the lid and let it sit for a while so that all the excess water is absorbed by the noodles.
  3. Dish the noodles into a plate and top with the cooked eggs. You can garnish with sliced chilli or spring onion. Serve.
