Notes: You can add bacon bits or chopped onion.
- 1 large russet potato, peel and wash
- 1/4 tsp salt
- 1 tbsp unsalted butter
- 2 tbsp milk
- Cut the potato into quarter and place in a small pot. Cover with cold water and bring the water to a boil. Add 1 teaspoon of salt and reduce the heat to a simmer and boil for about 10-12 minutes.
- In a small saucepan, warm the milk, do not boil. Melt the butter in another saucepan (I place the butter in a aluminium bowl over hot water).
- Drain the potato and using a potato masher, mash the potato. Add melted butter into the potatoes. Gradually pour in the milk and mix well using a spoon, stop when the potato mixture is sufficiently moist and fluffy.
