1 bitter gourd (approx 300 g)
100 g collar meat, sliced thinly
10 g dried prawns, soak & drain
1 tbsp oil
3 cloves garlic, minced
Marinade for Bittergourd
1 tsp salt
2 tsp sugar
Marinade for meat
1/2 tsp light soy sauce
1/2 tsp corn flour
1. Wash & cut bittergourd into halves, lengthwise. Remove seeds & pith. Slice thinly at a slant. To get rid of the bitterness of the bitter gourd, marinate the bitter gourd with a mixture of 1 tsp salt and 2 tsp sugar for 30 minutes, scald with hot water for 1 minute. Drain and set aside.
2. Marinate meat for 10 mins.
3. In a fry pan, heat the cooking oil on medium heat, then add in the minced garlic and fry till fragrant. Add the shrimp and stir fry for about 2 mins.
4. Add the pork slices to the wok. Stir-fry the pork until almost cooked. Then add in the bitter gourd, fry for 10 mins until softened. Dish out & garnish with shallots, serve.
