This is a traditional Thai dessert. The pumpkin should preferably be creamy.
1 pinch salt
1. Cut the pumpkin into wedges and remove all the seeds.
2. I am using frozen shredded coconut, so I will need to fluff the coconut before adding the salt and mix well, steam for 10 minutes. Set aside to cool.
3. Steam the pumpkin pieces for 15-20 minutes depending on the size of your steamer and the pumpkin. Check for doneness by pushing a tip of a knife into the pumpkin, you should be able to insert the knife easily. Do not overcook the pumpkin until it fall apart. Turn off the heat when it is just cooked, keep the lid closed until you want to serve the pumpkin.
4. coat the pumpkin with the shredded coconut. Serve.
