Coconut Milk Jelly 椰汁糕 [23]

Adapted and modified from Ann (Anncoo Journal)

Ingredients

250 g coconut milk
350 ml water
10 g agar agar powder
80 g sugar
3 blades pandan leaves, knotted
1 pkt aloe vera with syrup
pinch of salt


Method

1. In a pot, add sugar, water, pandan leaves and agar agar powder. Bring to a boil over medium heat, stirring constantly until sugar dissolves. Leave it to boil for another 3 minutes, then reduce the heat to a simmer.

2. Discard pandan leaves, add coconut milk and salt and stir for another 2-3 minutes. DO NOT BOIL.

3. Pour the jelly mixture into a 7-inch square bowl/jelly mold. Let the jelly coll before transferring to the refrigerator to chill for 2 hours or until set.

4. Cut the coconut jelly into small cubes and serve with aloe vera. You can get a nice cutter from Diaso for this.
