Tip01-Substitute Cornstarch

POTATO STARCH
One-to-one substitution. When you whisk, it tends to coagulate, so add gradually or sparingly.

TAPIOCA FLOUR
Great substitution. 2 tablespoons for every 1 tablespoon of cornstarch.

RICE FLOUR
Rice flour thickens up like plain flour. 3 tablespoons for every 1 tablespoon of cornstarch.

ARROWROOT
One-to-one substitution. It produces the same finish as cornstarch.

FLOUR
3 tablespoons for every 1 tablespoon of cornstarch. Flour will not give a glossy touch unlike cornstarch and will have to cook slightly longer than cornstarch.
