500 g pork ribs
750 ml water
7 pitted red dates
200 g watercress ends trimmed, then roughly cut
1 tbsp wolfberries soaked
salt to taste
1. Blanch pork ribs in a pot of boiling water and wash off the scum.
2. In another pot, boil 750ml of water. Add blanched pork ribs, red dates and watercress and bring to a boil. Lower heat and simmer for about 45 mins.
3. At about 20 minutes before turning off the heat, add the wolfberries and let the soup simmer for another 20 minutes.
6. Season with sea salt to taste before serving.
