Braised Chicken with Black Fungus 雞翼燜黑木耳

Ingredients

  • 500g mid-joint wings
  • 100g black fungus, cut into small pieces
  • 100g fresh shitake mushrooms, sliced
  • 2 slices old ginger
  • 1 onion, sliced
  • 2 garlic cloves, sliced
  • 1 tbsp oyster sauce
  • 1 tbsp light soy sauce
  • 1/2 tsp dark soy sauce

Directions

  1. In a hot frying pan, place the chicken with skin side down. Stir-fry till golden brown. Flip the wings and let them cook for another 2 minutes. Remove the chicken from the pan.
  2. In the same pan, add in the onion, ginger and garlic and let it cook till fragrant. Add in black fungus and shitake mushroom. Let it cook for about 2 minutes. Return the chicken to the frying pan.
  3. Add in the oyster sauce, light and dark soy sauce. Stir until all the chicken meat is coated with the sauce and boil for another 2 minutes. Add water, cover the pan and allow the chicken to simmer for 15 minutes.
  4. Remove the lid and cook for another 30 seconds to reduce the gravy. Serve hot.

Notes:
Braising refers to the cooking method that requires the ingredients to be rinsed well, placed into a braising sauce and boiled till cooked, so that the flavour of the sauce will be absorbed into the ingredients, the meat becomes flavourful and tender. When braising meat & poultry, blanch them in hot water first to remove the surface blood. In this recipe, we pre-cook the meat first.
